Sweet potato and kale quesadilla
Did I mention I am obsessed with sweet potatoes.. I make sweet potatoes and kale at least twice a week. I always have leftovers so I decided to make quesadillas to get a little more interesting. Of course i put siracha on the top. Love it.
Makes 2 quesadillas
Ingredients
1 large Sweet potato chopped
1 cup kale finely chopped
4 quesadillas
1 clove of Garlic
1 tablespoon of olive oil
Recipe
1. In a skillet add olive oil and minced garlic on medium heat. Preheat the oven to 350° F
2. Once garlic is golden brown add your cubed sweet potatoe to the skillet and sprinkle with salt & pepper. Cover sweet potatoes and allow to cook for 5 minutes or until easily pierced with a fork. Once the oven is preheated . Place tortillas in aluminum foil and place in oven.
3. Add spinach or kale and cover. Let kale cook until wilted about 2 minutes.
4. Take out the tortillas once they are warm and assemble quesadillas.
5. Enjoy!
